Easy like 1-2-3. Takes up 10 minutes to make and its very clean.
Whisk one egg with 1 tsp of baking powder and add 1/4 cup agave or honey. Mix again and add 1/2 cup of unsweetened apple sauce and 2 tbsp of pumpkin puree. Mix and add some pumpkin pie spice, 1/4 cup raisins and 1/4 cup chopped walnuts. Last goes in the 1 cup of raw old-fashioned oats.
Bake 6 muffins at 350F for 25 minutes.
