Yummy gluten-free, healthy, flourless cookies. Can be made vegan as well!
Preheat oven to 350°F (175°C).
Drain chickpeas and combine with vanilla and honey in a food processor until very smooth. Add the remaining ingredients except chocolate chips and mix again. Finally, stir in chocolate chips.
Use spoons to place on a greased cookie sheet. Keep in mind that they will not expand very much. The dough will be very sticky, but this just creates a deliciously soft cookie.
Bake for 10-12 minutes. This recipe will make 12-15 small cookies. Test on your friends – they’ll never be able to guess the secret ingredient!
