A Sticky, Sweet, Moist Oatmeal Raisin Protein Cookie - All of the flavor and none of the guilt! 80 kcal, 2F/12C/6P
1-Preheat oven to 375
2-Combine:
🔸 4 scoops vanilla whey (isolates are good, but avoid hydrolyzed as they don't cook as well!)
🔸 1/2c almond flour
🔸 2c rolled oats
🔸 1/4c brown sugar Splenda baking blend
🔸 1 tsp baking soda
🔸 cinnamon (1 tbsp) + nutmeg (.5tsp) to taste
3-In another bowl combine:
🔹 1c puréed chickpeas (run through food processor til well blended)
🔹 1/2c raisins
🔹 1c unsweetened applesauce
🔹 2 whole eggs
🔹 1tsp vanilla extract
4-Combine wet and dry ingredients well
5-Spoon mixture onto a cookie sheet lined with parchment paper
6-Leave about 1.5 inches in between cookies
7-Bake at 375 for approx 8 minutes or until firm--Outside will remain sticky :-)
