If pumpkin pie, bread pudding and pumpkin loaf had a love child this would be it! Deliciously moist and packed with protein, healthy fats AND low carb, this is a perfect treat any time of year but especially in the fall when pumpkins are abundant!
In a bowl combine all ingredients and mix until smooth. Pour into a lined bread/loaf tin and bake at 350 F for 45-50 minutes. Allow to cool slightly before removing from tin and then cool completely before slicing into 8 even slices! Enjoy!
