If pumpkin pie, bread pudding and pumpkin loaf had a love child this would be it! Deliciously moist and packed with protein, healthy fats AND low carb, this is a perfect treat any time of year but especially in the fall when pumpkins are abundant!

² Ingredients

  •  2 serving (serving = 1/4 cup) Now Foods Almond Flour
  •  3 serving (serving = 1 scoop) BSN Syntha-6 Isolate
  •  1 cup, mashed Cooked Pumpkin
  •  2 tablespoon Coconut Oil
  •  3.33 serving (serving = 3 tbsp) Egg Beaters 100% Liquid Egg Whites
  •  1/2 serving (serving = 1 cup) Silk Pure Almond Milk - Unsweetened Original
  •  1/4 cup, chopped Pecan Nuts
  •  1 serving (serving = 1/4 cup) Trader Joe's Raw Pumpkin Seeds
  •  1/2 serving (serving = 1 tsp) McCormick Pure Vanilla Extract
  •  1.5 serving (serving = 1 tsp) McCormick Ground Cinnamon
  •  1/4 tbsp Nutmeg (Ground)
  •  0.125 tbsp Cloves (Ground)
  •  1 serving (serving = 1/4 tsp) Pampered Chef Coarse Sea & Himalayan Salt
  •  1/2 serving (serving = 1 tsp) Kroger Baking Powder
   

q Directions

In a bowl combine all ingredients and mix until smooth. Pour into a lined bread/loaf tin and bake at 350 F for 45-50 minutes. Allow to cool slightly before removing from tin and then cool completely before slicing into 8 even slices! Enjoy!
