Lean turkey, quinoa, and vegetables make this comfort food a guilt free dinner!
This recipe substitutes turkey for beef, cuts down on normal ketchup and adds extra vegetables and quinoa. I have made the meatloaf with turkey and veggies before but not the quinoa. I didn’t tell the boys it was in there until they told me it was good! It’s kid and husband approved!
Preheat oven to 375. degrees.
Ingredients:
1.25 Pounds of Lean Ground Turkey
1/4 C Cooked Quinoa – I boil mine in half chicken broth, half water to give it more flavor.
1/4 C of Chopped Onion
1/2 C of Chopped/Diced Carrots
1/4 C of Chopped Red Pepper
The veggies do not have to be exact. Adjust to what you have on hand or what your family will eat!
1/4 C Whole Wheat Bread Crumbs – If you don’t have whole wheat it’s okay!
1 t Chopped Garlic
1/2 t Garlic Powder
1/4 t Lite Salt
1/4 t Ground Pepper
1 Egg
1/3 C of Ketchup – Use Low Sugar if you have it!
1 t Yellow Mustard
1.5 T Low Sugar BBQ
Mix all ingredients together thouroughly. It’s easiest to just put your hands in and get messy! Form into a loaf in loaf pan.
Topping:
In a small bowl separately mix together and spread evenly over meatloaf.
1/4 C of Ketchup
1 T BBQ
1/2 t Yellow Mustard
Place in oven for 45-60 minutes or until center temperature is 160 degrees. This makes six servings or enough for the three of us to eat dinner and I had one piece left for lunch the next day.
