A light, healthy, delicious and SIMPLE trout recipe. Perfect for the summertime. Great served with salad or roasted veggies.
1. Season 2 rainbow trout filets with salt and pepper (and olive oil, if you wish).
2. Top each filet with 1 tbsp roasted sliced almonds, 1 tbsp chopped fresh mint, and 2 slices fresh lemon.
3. Bake at 350 for 15 mins.
