These scones are GLUTEN FREE and yes... they are BERRY delicious! I can't even express how excited I am about this recipes! These are a pretty hefty size, so 1/2 portion may be enough... but that doesn't mean you'll want to stop eating them! Almond flour is an awesome gluten free option for baking, but keep in mind it does up the fat content. Good fat, yes, but if you're watching your macros just be aware! On a more exciting note, using almond flour also LOWERS the carbs and UPS the protein!
Preheat oven to 350F.
Combine all ingredients except for berries in a bowl. Mix until well combined.
Stir in berries (I found my hands to be the best tools for mixing this!)
Transfer dough to a floured surface and mold into square that's about 7"x7" and 3/4" tall (estimate).
Cut square into 4ths so you have 4 squares. Cut each of those squares diagonally in half so you have 8 right angle triangles.
Transfer to a baking sheet lined with parchment paper.
Bake 11–15 minutes, until they begin to brown on top and aren't mushy.
Allow to cool completely before devouring!
Yields 8 large triangular scones.
