Remember the fun movie snack you used to get? Here's my "healthified" version using my garbanzo cookie dough treat recipe, adding just a drizzle of chocolate on top instead of an entire coating!
Combine chickpeas, peanut butter, vanilla, cinnamon, salt, honey, and stevia in food processor.
Add milk if necessary to reach desired consistency.
Stir in mini chocolate chips if desired.
Chill for 30 minutes.
For cookie dough "bites": Roll 1/2 tsp "cookie dough" into a ball and place on a plate/tray. Repeat for remainder of dough (yields about 144). Return to freezer for 10–15 minutes.
Melt dark chocolate morsels for coating/drizzle (microwave 30 seconds at a time until smooth)
For cookie dough "bites": Drizzle melted chocolate on top of all bites. Return to freezer for 20 minutes.
For cookie dough "cups": Fill the bottom of a small cupcake liner with melted dark chocolate. Repeat for desired number of treats. Freeze for 20-30 minutes. Fill each frozen chocolate cup with 1tsp of cookie dough, pressing lightly. Top each cup with a small layer of melted dark chocolate, and return to freezer for another 30 minutes.
Devour!
Yields about 144 bites, 12 servings of 12 bites.
