This is an extremely filling, delicious and healthy breakfast. It tastes like dessert which is incredible. It bakes into a self serve cake without any flour or unhealthy ingredients. You MUST try this recipe! It can be gluten free with certified gluten free oats!
Shred carrots and dice the apple into a microwave safe bowl. Add raisins. Add a small splash of water and microwave for 2 minutes on high.
Add oats, cinnamon, baking powder, applesauce, almond milk, 1 tsp of the vanilla extract and 3 Splenda packets into the bowl. Combine until completely mixed.
Put the entire mixture into a ramekin dish or single serving casserole dish that is greased with non-stick cooking spray. Bake in the oven for 20 minutes at 375 degrees celsius. After 20 minutes turn your oven to broil and let it sit under the broiler for 2 minutes. This really helps to develop the crust nicely.
Microwave the tablespoon of cream cheese and extra tsp of vanilla for 30 seconds. I usually add an extra splash of almond milk in there as well. When it's melted add the last packet of Splenda. Pour the mixture overtop of the finished cake.
Feel free to add more or less sweetener to taste!
