A fun take on french toast that will make you feel like a kiddo again, and it's all clean.
You can use 2 slices of Ezekiel bread or 1 Ezekiel english muffin for this. Prepare your batter by adding 1 egg white (or 3 tablespoons of liquid egg whites), 1 tablespoon of unsweetened almond milk, 1 teaspoon of pure vanilla extract, and a dash of cinammon. Mix well.Tear your muffin or bread into small pieces (you can cut them if you want it took a little prettier than this), dip each piece in the egg mixture with a fork, or your hands if you don’t mind the eggy-ness.Drop each piece into a frying pan that has been sprayed with coconut oil. Cook on each side until egg is fully cooked.Serve with greek yogurt and fruit for dipping, or if you want to use organic pure maple syrup, or Hey Shuga syrup, those are both options as well! I opted for greek yogurt and fruit, for the extra protein and less sugar.
