They were ridiculously moist and you’d never guess that the key ingredient is ZUCCHINI - which you cannot taste - they are also Egg, Grain, Lactose, Sugar, and Nut Free
1. Preheat the oven to 400 and grease a shallow baking pan (I used a medium size loaf tin)
2. In one bowl sift together your dry ingredients (except chocolate chips)
3. In another bowl, combine your wet ingredients, except the zucchini (it will look piecy)
4. Add your wet ingredients to your dry ingredients and set aside
5. In your empty bowl, shred your zucchini then add the chocolate syrup. Mix together with a fork, and let it sit for a few minutes so the zucchini can absorb the chocolate
6. Add the zuchhini to the batter and stir until well combined
7. Fold in chocolate chips (optional)
8. Scrape into baking pan
9. Bake for 30 minutes, or until a fork comes out clean
10. Let cool completely then devour!
Chocolate Frosting:
Mix 3 tbsp cocoa powder with 3 tbsp honey, 1 tbsp coconut oil, and 1 tbsp melted chocolate chips
