³ Description

This pesto-like dish is made with brown rice and fresh spices packed full of flavour. A wonderful dinner dish, this recipe calls for 2 servings.

² Ingredients

  •  1/2 cup Brown Rice (Long-Grain, Cooked)
  •  1 cup (8 fl oz) Water
  •  1 tsp Sea Salt
  •  3 tsp Minced Garlic
  •  5 leaves Basil
  •  2.5 tbsp, leaves Tarragon
  •  1/4 cup, chopped Young Green Onions
  •  1.5 oz Lemon Juice
  •  1 tsp Black Pepper
  •  2.5 tablespoon Olive Oil
  •  2 serving (serving = 1 serving) Supreme Choice Raw Shrimp
  •  1 serving (serving = 3 tbsp raw) Bob's Red Mill Unsweetened Shredded Coconut
  •  1/4 serving (serving = 1 cup) Silk Pure Almond Milk - Unsweetened Original
  •  6 cherry Cherry Tomatoes

Ingredients
1/2 cup brown rice
1 cup water
1 tsp sea salt
1 tbsp minced garlic
1/2 cup basil
1/2 cup tarragon (dry)
1/4 cup green onions
1 1/2 tbsp lemon juice
1/4 tsp black pepper
1/5 cup olive oil
12 raw shrimp
1/2 cup unsweetened shredded coconut
1/4 cup almond milk
6 cherry tomatoes

Directions
Rice takes a while to cook so I prepped my rice early, once your rice is cooked leave on low to keep warm (rice takes approx 40 mins to cook). Next, in a processor mix basil, tarragon, garlic, lemon juice, green onion, sea salt, pepper till finely chopped. Gradually add in the oil to get a nice consistency. Take that and add it to the rice with the cherry tomatoes halved. Take shrimp and dip in almond milk then roll in shredded coconut, cook on medium heat until fully cooked.
