Preheat oven to 350. Mix wet and dry ingredients separately. I processed all of my wet ingredients together. Fold in wet ingredients with the dry and mix until smooth, fold in blueberries. Add into muffin tins and let bake for allotted time.
I also used 1 tsp lemon extract in my recipe which is optional, and I used 1 tbsp lemon zest.
