A delicious dairy-free and gluten-free alternative to my favorite creamy soup!
Saute the mushrooms, shallots and garlic and season with salt and pepper. Add coconut cream and vegetable stock, season once more and stir together. Let simmer for 45 minutes, or until it resembles a creamier texture. Garnish with green onion and enjoy!
