Healthy Samoas recipe from @gosupersisters
Preheat oven to 350 & line baking sheet w/ parchment paper.
For cookie: in a medium bowl, combine 1 cup almond meal, 1 tbs mashed banana, 1 tbs applesauce, 1 tbs coconut oil, 1 egg yolk, 1/4 unsweetened shredded coconut, 4 packets of stevia, 1 tsp vanilla & a pinch of salt. Mix & roll into twelve 1" balls. Flatten & place on cookie sheet. Bake 12-15 mins or til golden.
In a small saucepan, heat 1/4 c unsweetened almond milk, 1 tbs truvia, 1 tsp maple extract and 3/4 tsp cornstarch. Cook on medium heat til a thick "caramel" forms. Remove from heat & add 1/3 c unsweetened coconut. Spread over each cookie. For the chocolate topping, melt 1 square of semi-sweet bakers chocolate with 1/2 tbs coconut oil until smooth. Drizzle over cookies. Store in freezer. Enjoy!
