Forget spaghetti squash!! This is the newest Italian food low-carb makeover!!! "bread" is made from eggplant, an amazing veggie used often in Italian cuisine!!
Peel skin off eggplant. Cut lengthwise into 4 pieces, so you have a top and bottom rounded piece for the submarine look! You can still use the two other pieces for your sammy they just won't look round :( Hollow out top half of sub so meatballs can fit! Massage with 1tsp olive oil and roast for about 15mins in the oven on 400F.

http://www.simplynotable.com/2013/gluten-free-meatballs/. In foodproccesor, blend oats, garlic, spices and romano cheese. Add chopped shallot, turkey meat and 1 egg. Form 12 meatballs with hands. Heat up 1tsp evoo in frying pan. Fry until brown on one side, and flip. Don't handle too much because you will break your balls ;) Place frying pan in oven to finish. DO NOT leave hot frying pan on stovetop when finished and forget to use oven mitt, you will burn!!! Assemble meatballs on bottom layer of 'sub', top with heated sauce and shredded cheese, top with rest of sub!! ENJOY!!!
