I make these yummy muffins with the carrot pulp from juicing! Subtly sweet and satisfying!
Make sure that carrots are grounded fine if not using juice pulp. Combine all ingredients. Bake at 350 for 5-8 minutes. Should be done when tops are light brown and knife comes out clean. Cool and enjoy!
