I make these yummy muffins with the carrot pulp from juicing! Subtly sweet and satisfying!

² Ingredients

  •  2 medium Egg
  •  1/2 cup Butter
  •  1 tsp Cinnamon
  •  1 tbsp Vanilla Extract
  •  1.5 cup, grated Carrots
  •  1/2 tsp Baking Powder (Sodium Aluminum Sulfate, Double Acting)
  •  1/2 tsp Baking Soda
  •  1.5 cup White Wheat Flour (All Purpose, Bleached, Enriched)
  •  4 serving (serving = 1 tbsp) Whole Foods Market Organic Raw Blue Agave
   

q Directions

Make sure that carrots are grounded fine if not using juice pulp. Combine all ingredients. Bake at 350 for 5-8 minutes. Should be done when tops are light brown and knife comes out clean. Cool and enjoy!
