A simple lunch that brings lots of flavor and color to the table

² Ingredients

  •  1 tbsp Young Green Onions (Tops Only)
  •  1 medium whole (2-3/5" dia) Red Tomatoes
  •  1 dash Black Pepper
  •  1 dash Salt
  •  1 oz Dried Cranberries
  •  1 oz Dry Roasted Pecan Nuts (with Salt Added)
  •  3/4 serving (serving = 1 cup) Emeril's All Natural Organic Vegetable Stock
  •  1/2 cup, dry, yields Couscous
  •  1 oz Kale
   

q Directions

Cook the couscous with the vegetable stock, with a dash of salt and pepper. Bring up to boil and simmer for 5-10 minutes, stirring occasionally. Should be tender but not mush. Mix in the chopped pecans and cranberries. Served on a kale leaf with freshly chopped organic tomatoes and green onion.
