A simple lunch that brings lots of flavor and color to the table
Cook the couscous with the vegetable stock, with a dash of salt and pepper. Bring up to boil and simmer for 5-10 minutes, stirring occasionally. Should be tender but not mush. Mix in the chopped pecans and cranberries. Served on a kale leaf with freshly chopped organic tomatoes and green onion.
