It's a nutrient rainbow because of the different vegetables and peppers you can throw in! Delicious and quite filling!
Preheat oven to 350F.
Get a 9 inch square or round pan, spray with cooking spray. Set aside.
Slice ham into cubes.
Slice peppers into chunks, remove tops.
Heat olive oil in frying pan until popping.
Add ham chunks, peppers, and spinach. Saute until spinach is wilted, peppers are soft, and ham is browned.
In an additional bowl, pour in egg whites and milk mixture. Stir. Add pepper, garlic powder, and Italian seasoning. Stir.
Take sauteed ham/veggie mixture and line the bottom of your greased pan, making sure of an even distribution of mixture along the bottom.
Pour milk and egg white mixture on top.
Bake for 30-40 minutes, until the sides are browning and a knife inserted in center comes out clean.
Feel free to substitute/remove spices and add cheese.
