The best protein cookie and it taste just like a thin mint cookie!! Low sugar. No baking required!
Place all ingredients into a bowl, including 1 teaspoon peppermint extract, and stir together. Scoop onto plate or tray, then set in fridge to set. You want the cookies to be hard to the touch. Keep refrigerator or store in freezer. Check the blog for a video of us making them!
