Easy and yummy. It reminds italian food for some reason. Very nutritious and won't keep you near the stove for hours.
Cooked rggplant with onion, green pepper, garlic ans tomatoes. Thats it. Topped with precooked lean turkey patties and plain greek yogurt. Love how filling yet light my dinner was! Yum
