q Directions

Grind the oats into a flour. Then add the rest of the mugcake ingredients (except for the quest bar) and blend again. Break apart the 1/2 quest bar into pieces and swirl it into the batter. Pour the batter into a bowl sprayed with nonstick spray. Microwave for 2:45-3:15 minutes. Then flip onto a plate and let cool before serving.

Make a cheesecake icing by blending 1/3 cup lowfat cottage cheese, 1/2 TBSP coconut flour, 1/2 TBSP almond flour (or more coconut flour), 1/2 tsp vanilla extract, and 5-7 stevia drops.

Optional is a healthy chocolate sauce made by mixing 2 tsp unsweetened cocoa powder, 1 tbsp almond milk, and 1 stevia packet.
