Strawberry cupcakes that are low in fat and free of refined sugars and flour. What's not to love?? These are a perfect summertime treat.
Cupcake Ingredients:
1 1/2 cups fresh strawberries
2 cups oats ground into flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup plain greek yogurt
1/4 cup unsweetened applesauce
1 egg
2 egg whites
1/3 cup baking stevia
1 tbs honey
1 tsp vanilla extract
1 tsp strawberry extract (optional)
3 drops red food coloring (optional)
Frosting Ingredients:
1/2 cup plain greek yogurt
1/3 cup strawberries
1/2 tsp vanilla
stevia to taste
Directions:
Preheat oven to 350 degrees. Line a 12 count muffin pan with cupcake liners and set aside. (Tip: spray liners with cooking spray or use silicone liners as these cupcakes tend to stick to the paper liners)
Place strawberries in food processor or blender and blend until smooth.
In a medium bowl, mix together oat flour, baking powder, baking soda and salt. Set aside.
In a large bowl, mix together greek yogurt, applesauce, egg, egg whites, stevia, honey and extracts until combined.
Mix in the dry ingredients then gently fold in strawberry puree.
Divide batter among 12 cupcake liners and bake for 15-20 minutes.
While cupcakes are cooling, blend 1/3 cup strawberries in food processor or blender until smooth. Mix with greek yogurt, vanilla and stevia then frost cupcakes once cooled. Garnish with strawberry slices if desired.
