A teff wrap in itself is yummy already. And a filling of tuna (hmm!), gorgonzola (nom), broccoli (ohhh), tomatoes (drool) and much more deliciousness doesn’t really need all the explanation. It’s just Hmm. Yum. Nom. Etc. Etc. Etc.
Mix the egg and teff flour with a bit of water until it’s a thin pancake batter. Put this on a hot griddle or frying pan with some coconut oil, then put a lid on it, and bake for about 6min. Meanwhile, make your wrap filling by mixing all the other ingredients. Put your wrap on a plate, spread the filling on one side of the wrap and roll up.
