Came up with these babies when I was desperate in my last week of contest prep. I could no longer have my protein pancakes because of the sodium and needed more veggies, less carbs to fit my macros... then it hit me CAULIFLOWER! These doughtnuts are so doughey no one will have a clue they are made with veggies and such little carbs :) my trainer didnt believe me and thought i was lying ahout the ingredients haha sooo packed with protein and perfect meal before bed. Add any topping you wish :) here i just used cocoa stevia and water (fitting for contest prep)
To rice cauliflower, place raw cauliflower in a food processor and pulse until the consistency of rice.
Place 1/2 c riced cauliflower in a bowl, cover with a damp paper towel and microwave for 2 minutes
Blend 1/4c oats to oat flour
Add the rest of the ingredients to the cauliflower (will be thick):
-1scoop whey (muscleology nitro-pro is very low sodium)
-2Tbsp psyllium husks
-2T almond milk
-2T water
-2egg whites
spoon into 4 doughnut molds.
Bake at 400F for 18 min, then broil for 6 minutes or until brown on top :)
Top with any topping you like, cocoa+stevia+water, peanut butter+ stevia, jelly, etc!! Endless opportunities here folks! :)
