A BETTER alternative to store bought jam. Only 4 ingredients, takes seconds to prepare and will be ready by morning :) This combination of flavors makes for a super refreshing Jam that goes great on toast, rice cakes, and even fish or poultry. Pectin free and sugar free!
2c blueberries (if frozen, microwave)
2T lemon juice
1T truvia/stevia (or more if you like sweeter)
1T chia seeds
Place all ingredients in a magic bullet out blender and blend until smooth. Pour into a Mason jar and store in the refrigerator overnight. The chia seeds form into a type of gelatin and you are left with a pectin free jam!
