A great weekend indulgence!
Slice half of the banana and place in a 6-8 inch skillet, add 1/3 cup almond milk, sprinkle with cinnamon and coconut sugar. Begin to simmer over a low heat. Stir frequently.
For the toast toss other half of the banana, almond milk, cinnamon, pumpkin pie spice and vanilla in a blender or food processor and blend on high. Pour into a wide dish like a pie dish and dip/soak bread coating both sides. Next add a pat of Earth Balance vegan butter to a medium size skillet and bring to a sizzle. Sautee bread slices over medium heat until golden brown. remove a place on warmed plates. At this point add 1/2 tsp chia seeds to bananas to thicken and continue to simmer for approx. 1 minute. Remove from heat and pour this hot creamy caramelized goodness over your toast and garnish with slices of fresh organic strawberries with just a drizzle of maple syrup! Take a bite and prepare to swoon!
