This is super versatile and can be made into muffins, a tray bake, or a bread depending on what you fancy!
Mix together:
1 small apple diced very finely,
1 cup almond flour,
2 tbsp coconut flour,
1 heaping tablespoon of cinnamon,
2 eggs,
1 tsp baking soda,
2 tbsp coconut oil (melted)
2 tbsp sweetener (I suggest honey, agave nectar, or maple syrup)
Combine the ingredients and then pop into whatever tray you want I.e. Muffin cases, a large baking tray or a loaf tin. Then bake at 180 degrees until cooked through. This is around 15 minutes for muffins and tray bakes, and 30 minutes for loafs- but keep your eye on it!
