I love making protein muffins on the weekend! They are a great snack to have around the house for the upcoming week. (not that they last very long in my house). I have adapted this recipe once more to include an apple flavor. Since fall is approaching the emphasis is always on pumpkin, but apple is a great flavor to use during fall too.

q Directions

Preheat oven to 350 degrees. Combine all ingredients in one bowl and mix well. Coat a muffin pan with non-stick cooking spray and scoop the mixture into each muffin hole. Cook for 10-12 minutes. These muffins cook very fast so keep an eye on them. Depending on how hot your oven gets, they may be done after only 8 minutes. Remove once the muffins are slightly brown on the tops.
