Apple Pecan Muffins: - 2/3 cup coconut flour - 2 tsp. baking powder - 1/2 tsp. salt - 1/2 tsp. baking soda - 1/2 cup Splenda - 8 oz. plain greek yogurt - 5 eggs - 2 tsp. vanilla - 1 1/4 cup diced apples - 3/4 cup chopped pecans

  •  1 serving (serving = 1 cup) Fage Total 0% Greek Yogurt
  •  1/2 tsp Salt
  •  2 tsp Vanilla Extract
  •  1 tsp Baking Soda
  •  3 serving (serving = 1/4 cup) Kirkland Signature Halved Pecans
  •  48 serving (serving = 1/2 tsp) Splenda Sugar Blend
  •  5.3 serving (serving = 2 tbsp) Bob's Red Mill Organic High Fiber Coconut Flour
  •  1.25 cup, quartered or chopped Granny Smith Apples
  •  5 serving (serving = 1 egg) Kirkland Signature Organic Brown Eggs
  •  16 serving (serving = 1/8 tsp) Great Value Baking Powder
   

q Directions

1. Preheat oven to 350°F
2. Line a muffin tin with paper liners (Makes 18 muffins)
3. Dice the apple into small chunks and set aside (Make about 1 1/4 cup)
4. Chop the pecans into small chunks and set aside (Make about 3/4 cup)
5. In a small bowl combine the coconut flour, baking powder, salt, and baking soda, then set aside
6. In another mixing bowl combine the Splenda, greek yogurt, 4 eggs, and vanilla with an electric mixer
- Mix on SLOW until smooth
- Then, mix on MEDIUM for 2 minutes
- If the batter is too thick, add the 5th egg
- Put the electric mixer away
7. Mix in the dry ingredients (coconut flour, baking powder, salt, baking soda)
8. Fold in the diced apple
9. Fold in HALF of the chopped pecans
10. Get your muffin tin ready by spraying the paper liners with cooking oil
11. Scoop the muffin mixture into the muffin tins, filling them about 2/3 full
12. Sprinkle the remaining chopped pecans on top of the muffins
13. Bake for 30 minutes
14. Let cool and enjoy!
