Quick, easy, healthy oatmeal raisin cookies that are super low in fat! - 1 cup Oats (80 g) - 1/3 cup Coconut Flour (30 g) - 1/2 cup Splenda - 1/2 tsp. Salt - 1/2 tsp. Baking Powder - 1/2 tsp. Cinnamon - 1 Egg - 2 Egg Whites - 1 tsp. Vanilla Extract - 1/3 cup Raisins
1. Preheat oven to 350°F
2. Line a baking sheet with parchment paper and spray with cooking oil.
3. Take half of the oats (1/2 cup) and blend them in a food processor so they become a powder (I use my Magic Bullet for this).
4. In a bowl, combine the oat powder, the remaining 1/2 cup oats, coconut flour, splenda, salt, baking powder, and cinnamon.
5. Add in the egg, egg whites, and vanilla and mix well until a dough forms.
6. Scoop the dough onto the baking sheet (makes about 12 cookies).
7. Bake for 8 minutes.
8. Let cool and enjoy!
