Super moist apple pancakes topped with a vanilla maple frosting and a cinnamon apple crumble!
In a blender, blend oats into a flour. Add the rest of the dry ingredients and blend together. In a separate bowl, combine wet ingredients. Pour into the blender along with 1/2 cup chopped apple. Blend well! Batter should be thick but easy to scoop out. Now stir (not blend) in the remaining 1/4 cup chopped apple into the batter. In a greased pan (I use coconut oil spray), scoop out batter into pancakes about 1 finger in diameter. Cook over low eat. Once bottom is solid, flip to finish cooking.
**Apple cider vinegar and coconut oil are optional for the batter, but do wonders for the texture!
Apple Crumble Topping: Once pancakes are done, use the pan and add a bit of coconut oil. Add as much chopped apples and apple slices as desired. Add 1-2 tbsp of almond flour and a hefty dash of cinnamon. Cook over medium heat until apples are soft and tender and have formed into a crumble with the almond flour.
Vanilla Maple Frosting: stir 1 cup, 1/2 scoop vanilla whey, and stevia to taste in a bowl. Add a splash of almond milk and just a TINY dab of maple extract if desired. (Or tbsp of maple syrup)
