Dessert for breakfast! Top with your favorite nut butter.
Grind oats into flour using either a blender or a coffee grinder. Combine, oats, 50 g apple very finely diced, 1 egg, 1 egg white, baking powder, cinnamon, 2 TBS maple syrup and stevia and blend well. Pour batter into a preheated waffle iron coated in nonstick spray. Microwave the remaining chopped apple for 2:00 or until softened. Then add 1 TBS maple syrup and a sprinkle of cinnamon to softened apple. Remove waffle when timer is up and top waffle with apple mixture and cashew butter.
