The taste of fall for breakfast. Oatmeal infused with pumpkin and apple all baked in apple halves. A warm sweet treat for the crisp fall weather.
Directions:
1. Preheat oven to 250 degrees
2. Cut apple in half and hallow out the middle (save the apple in bowl making sure to discard the core and seeds)
3. In a small sauce pan bring almond milk slowly to a boil
4. When milk starts to simmer, add pumpkin, pb2, and cinnamon. Stir until all is combined
5. Smash the excess apple that was removed from the apple halves
6. Poor in oats and smashed apple into sauce pan and stir continuously for about 3 mins
7. Cut a small slice off the bottom of each apple half so that they stand
8. Place halves in a shallow oven safe dish and add 2 tbls of water to the bottom of dish.
9. Spoon oatmeal into apples and top with almonds and coconut chips
10. Place in oven and bake for 5-7 mins (make sure the coconut chips don't burn)
11. While oatmeal is baking, blend all the glaze ingredients together
12. Remove oatmeal from oven when apple is tender
13. Top with glaze (Glaze: 1 1/2 tbls low fat cream cheese 1 tbls fat free cottage cheese 2 tbls almond milk 1 tbls vanilla protein) and enjoy!!
