Say hello to my BLACK BEAN FALAFEL "PIE" Why make only ONE twist on a dish when you can have so much more fun with TWO? This is delicious warm when made or chilled as leftovers.
Preheat oven to 350F
Put all ingredients for black bean falafel into food processor and blend until smooth.
Pour mixture into greased pie dish.
Place in oven and bake for 25-30 minutes or until cooked through (not TOO soft in the center, but don’t burn the top!)
Remove pie and let cool for 20 minutes.
Top pie with hummus, sliced tomato and cucumber, and drizzle on tzatziki sauce.
Slice, serve and devour!
**Alyssia's tip: You could also just make falafel patties, but it's DEFINITELY worth it to make the pie!!**
