The perfect carrot cake cookies soft, chewy and full of fiber, protein and low in sugar!
Recipe: 3 medium carrots grated, 1/2 cup unsweetened applesauce, 1 cup gluten free oats, 1 scoop vanilla trutein protein powder, 1 egg, 2 egg whites, 1/4 cup reduced fat shredded coconut, 1/2 tsp baking powder, 1/2 tsp baking soda, 1 tbsp cinnamon, 1/2 tsp ground ginger, 1/2 tsp cloves, 1 tbsp agave nectar, 1/4 cup raisins. Mix all wet ingredients together and fold in dry ingredients to combine. Drop cookies in a greased baking sheet and bake at 350 degrees for 12 minutes. Recipe makes 20 cookies! Then devour!
