These were so fluffy and sweet it's amazing! Coconut flour is a great low-carb alternative when baking, and are perfect for pancakes
Ingredients:
- 2 tbsp rolled oats
- 3 tbsp coconut flour
- 1 tbsp unsweetened cocoa powder
- 1 tsp baking powder
- 1 tsp stevia
- 2 tsp plain fat-free Greek yogurt
- 1 tbsp unsweetened apple sauce
- 3 tbsp egg whites (carton)
- 3 tbsp unsweetened almond milk
- 1/4 tsp xanthan gum (optional, but helps make them fluffy)
Instructions:
1. Warm up a sprayed pan on medium heat
2. Mix all the dry ingredients, then blend with the wet ingredients
3. Spoon the batter onto the pan and use the spoon to spread them out into circles (They’ll be thick)
4. Cook for about 2 minutes, then flip and cook for another minute or so. You can make 3 at a time on a large pan!
