These little frozen pies are made with an oat/date/almond crust then topped with a banana + cherry nana ice cream filling and topped off with a chocolate coconut layer for a delicious combination of flavors!
Chocolate covered cherry single serve pies
- 1 cup oats
- 1/2-3/4 cup softened dates
- 1/2 cup almonds
Combine ingredients until sticky then press into the bottom of a few mini springform pans. Set aside while you prepare your filling and topping:
Filling
- 1 banana
- 1/2 cup frozen cherries
- 1/2 cup unsweetened vanilla cultured coconut yogurt
Topping
- 1 can coconut milk
- 1 cup milk chocolate chips
1) Combine filling ingredients in a food processor then top your crust and set in freezer while you prepare your topping.
2) combine your topping ingredients in a saucepan and heat until the chocolate chips are completely melted. Let cool then pour on top of your filling. Freeze for a few hours before serving.
