Enjoy this vegan sundae that combines two loves; banana split and overnight oats. Chocolate, strawberry, and vanilla overnight oats atop a banana and then topped off with cacao nibs, strawberry slices, peanuts, and barney butter cocoa + coconut butter.

² Ingredients

  •  1 serving (serving = 1/2 cup dry) Quaker Old Fashioned Oats
  •  1 serving (serving = 1 tbsp) Nutiva Chia Seed
  •  1/4 cup Baked Sweetpotato (Peel Not Eaten, Fat Not Added in Cooking)
  •  1 serving (serving = 5-8 drops) Sweet Leaf Liquid Stevia
  •  3/4 serving (serving = 1 cup) Silk Pure Almond Milk - Unsweetened Original
  •  1/2 serving (serving = 1 scoop) Sun Warrior Raw Vegan Chocolate Protein
  •  1/2 serving (serving = 1 scoop) Sun Warrior Vanilla Protein Powder
  •  1/4 cup, sliced Strawberries
  •  1 serving (serving = 1 oz) Sunfood Organic Raw Cacao Nibs
  •  1 oz Dry Roasted Unsalted Peanuts
  •  1/2 serving (serving = 2 tbsp) Barney Butter Smooth Almond Butter
  •  1 large (8" to 8-7/8" long) Bananas
   

q Directions

Ingredients
- 1/2 cup oats
- 1 tbsp chia seeds
- 2 large tbsp baked sweet potato
- couple drops liquid stevia (or another sweetener of choice)
- 3/4 cup almond milk
- 1/2 scoop chocolate protein powder of choice
- 1/2 scoop vanilla protein powder of choice
- 1/4 cup strawberries, pureed
- 1 large banana, sliced lengthwise
- 2 strawberries, sliced
- handful cacao nibs
- handful peanuts
- 1 tbsp barney butter cocoa + coconut

Combine your oats, chia seeds, sweet potato, stevia, and almond milk in a bowl. Once mixed, distribute evenly into 3 small bowls. Add your chocolate protein powder to one bowl, 1/4 scoop of your vanilla protein powder to another bowl, and the last 1/4 scoop of your vanilla protein powder and pureed strawberries to your last bowl. Mix each bowl well and then cover and let sit overnight. In the morning, place your banana on a plate and scoop your oats on top of the banana. Top off with yoru strawberry slices, cacao nibs, peanuts, and barney butter. enjoy :)
