This is a great way to bring some extra flavor to your morning oats. Melt your ice cream into some oats and (with some extra ingredients) you have a nice little oat cake ready to go for breakfast!
Mint chocolate chip ice cream oat cake
- 1/2 cup oats
- 1/2 cup SO delicious mint chip ice cream
- 1 egg
- 1 tsp vanilla
- 1/2 scoop vanilla protein powder
- 1 tsp baking powder
- 1 tbsp chia seeds
- milk as needed
Combine ingredients and bake at 350 for 35 minutes. Set aside to let cool while you prepare your filling. For my filling, I combined so delicious cultured coconut milk with some chocolate protein powder and cacao nibs. I also topped it off with dark chocolate mint sweetspreads.
