I tried making cookies but the dough was too wet so I poured it into muffin tins and made these bad boys :) Delicious, cinnamony, and slightly sweet muffins. They're great for breakfast or just when you're sweet tooth is yelling at you :)
1. Preheat oven to 350
2. In a small bowl, combine oats and almond milk (this helps soften the oats so they aren't too dry once baked)
3. In a large bowl, combine remaining ingredients
4. After a few minutes, pour the oat and almond milk mixture into the large bowl and stir to combine completely.
5. Grease muffin tin and pour batter until it's about 2/3's full.
6. Bake for 10 minutes or until a knife comes out clean
