Vanilla protein bread made with unsweetened shredded coconut and no sugar added pineapple juice. The banana adds a natural sweetness and makes it so moist and delicious.
Preheat your oven to 325 degrees. Beat together one ripe banana, 2 eggs and pineapple juice. Then add the flours, protein powder, baking soda and baking powder and mix well. Lastly, add your coconut and give it a final mix. Spray a loaf pan with non-fat cooking spray and pour it in. Top it with more shredded coconut if desired. Throw it in the oven and bake it for about 20-30 minutes or until a knife comes out clean. Cut it into 8 slices and have it for a snack, dessert, breakfast, or whatever!
**I used Optimum Nutrition protein powder, but any vanilla protein powder will work**
