- 3/4 cup Almond Butter (192 g) - 1/2 cup Splenda - 2 Tbsp. Coconut Oil (melted and cooled)(28g) - 2 eggs - 1/4 cup Coconut Flour (28 g) - 1/2 tsp. Baking Soda - 1/4 tsp. Salt - Optional: 1/3 cup mix-ins (I used mini M&M's)
1. Preheat oven to 350°F
2. Line a baking sheet with parchment paper and spray with cooking oil.
3. In a bowl, mix together the almond butter, splenda, and coconut oil.
4. Add in the eggs and mix.
5. Mix in the coconut flour, baking soda, and salt until a dough forms.
6. Scoop the dough onto the baking sheet (Makes about 20 cookies)
7. Bake for 8-10 minutes
8. Let cool and enjoy!
