Sweet & Crunchy Chicken Salad (Hold the Mayo!) Great on a Spinach Salad or Stuffed in between two Slices of Bread!

² Ingredients

  •  1/2 cup, cooked, diced Roasted Broiled or Baked Chicken Breast (Skin Not Eaten)
  •  1/4 fennel bulb Fennel Bulb
  •  1 tbsp Garlic Powder
  •  1/3 lemon yields Lemon Juice
  •  0.1 cup, packed Golden Raisins (Seedless)
  •  0.15 serving (serving = 3 oz) Trader Joe's Shredded Carrots
  •  1/3 serving (serving = 1 serving) Chobani 0% Plain Greek Yogurt
   

q Directions

In a Bowl, Mix:

1/2 Cup Diced Cooked Chicken Breast (I seasoned with Garlic Powder)
2-3 TB Plain NonFat Greek Yogurt
Juice of 1/3 of a Lemon
1 TB Golden Raisins (Unsweetened)
1/4 Cup Chopped Raw Fennel (+ fronds)
2 TB Shredded Carrots (Raw)
I seasoned with Mrs. Dash Table Blend + Dried Parsley
Optional: Season with Salt & Pepper

Let sit in the frig for at least an hour.
