Enjoy carrot cake in frozen form with these carrot cake bars made with a carrot cake "crust" then topped with a cashew "frosting".

q Directions

Frozen carrot cake bars - dairy free, vegan

- 1/2 cup almonds
- 1 cup oats
- 2 large carrots
- 10-12 dates
- sprinkle each cinnamon and nutmeg

Combine ingredients in food processor and mix well until clumps together. Press into the bottom of 3 mini loaf pans. Set aside to make your topping:

- 1/2 cup dairy free coconut yogurt
- splash dairy free coconut milk
- date sugar, to taste
- 1/4 cup cashew butter
- cinnamon, to taste

Mix will until mixture is smooth and creamy. Pour on top if your carrot cake mixture then freeze until Solid. Enjoy
