This is my all time favourite salad. I love it so much that I eat it EVERY single day for lunch at school ALL year. Yep, it's that good!

² Ingredients

  •  1 medium Cucumber (Peeled)
  •  1 medium (approx 2-3/4" long, 2-1/2" dia) Bell Peppers
  •  1 serving (serving = 1 medium) Roma Tomatoes
  •  1 large Red Onions
  •  3/4 cup, crumbled Feta Cheese
  •  1 serving (serving = 1 cup) Seeds of Change Seven Whole Grains Rice
   

q Directions

Mix all ingredients together and top with your favourite clean Italian dressing. ENJOY!
This recipe makes a VERY large bowl, but in our house, this bowl disappears very quickly.
