This baked oatmeal is my favourite because it uses my favourite flavour combo: Chunky Monkey! Which is peanut butter, chocolate, and of course banana! Yum, yum, yum!!!
1/2 cup oats
1/4 cup applesauce
Little bit more than 1/8 cup water
1/2 tsp baking powder
1 tsp. vanilla
2 tbsp. peanut butter
1/2 banana, cut up small
Mix all ingredients (except banana) together really well. Add in banana and mix until just combined. Baked at 375F for 25 minutes. Top with chocolate sauce (recipe below), remaining 1/2 banana and a little more peanut butter if desired (I did not top with more peanut butter).
Chocolate Sauce (optional)
2 tbsp. plain greek yogurt
1 tbsp. cacao
1 stevia packet
1-2 tbsp. milk (depending on consistency you would like)
Mix all ingredients together well. Make sure there are no lumps.
