I ate these as burgers. I used lettuce as my bun, the fritter as my "patty," and added some grated carrot and quinoa, and it was REALLY good! Definitely making these again!
2 egg whites
1/3 cup oat flour
1/4 tsp paprika
1/4 tsp chili powder
1 tsp garlic powder
1/8 tsp. cayenne pepper
1 cup grated zucchini
1/4 cup green onions, finely chopped
1/8 cup sun dried tomatoes
Mix all ingredients together in a bowl. Cook in a frying pan (greased with a tiny bit of oil) on low heat for 2-3 minutes. Flip over and cook for another 2-3 minutes.
