enjoying my refreshing lentil salad for lunch with grilled cod fillet. Salad recipe: 1 cup cooked green lentil ( dont overcook), mixed colored bell peppers, cucumbers, green onions, parsley. Dressing: lemon juice, olive oil, cayenne pepper, cumin( a must dor a athentic taste), balsamic vinegar, salt. Combine salad igredients all chopped small and add the dressing. Toss together and chill for 20 min or so. So healthy and nutritious.
