30 Minute (Healthy) Meal!
In a large skillet, brown a 20oz pkg of lean ground turkey
In a food processor, pulse:
4-5 Campari Tomatoes
1/2 of a Large Red Onion
1 Scallion
When turkey is cooked through, add tomato mix and season with garlic powder, cumin & black pepper
Let simmer for about 8-10 minutes, then add:
1/2 of a Roasted Red Pepper, chopped
2 TB Capers (rinsed)
About 10-12 Chopped Green Olives (rinsed)
Remove from heat after 2 minutes
Serve with Brown Rice or Salad - ENJOY!
